I was/am like you in that I found building up my riding is the way to go ... doing it gradually but steadily seems to work ... you get fitter, it feels good and so you do a bit more then a bit more. On the diet, I have found gradually changing it seems to work, at least for me. Each week I look to make a single change and to bed that change in place and then move to the next change. I find that if I try to make too bigger change, I just get overwhelmed and fall back to the bad old ways. My idea is to make permanent life long changes, hence the gradual approach.
Anyway hang in there, it will come about.
Oh, taking measurements helps too. Sometimes you may put on muscle but actually drop centimetres.
