Does anyone know of any innovative Australian based companies working in this space?

Manufacturing is all overseas. While there could be an Australian registered businesses promoting this local production is unlikely.
It is about cost so still possible that you can still get local local printing, cutting and stitching but at a significantly higher per unit price and something that isn't readily available as full-service or off-the-shelf.

.
Of course the fabric is imported, but the machine which prints and cuts is here and the sewing machine lady's are lightning fast putting all the bits together.

Scody more a a general cyclewear provider and may not have the expected 'performance' level or style gear. Take note of their conditions as the last time I was supporting a club, Scody contractually would own all designs... even original design I created would technically be owned by Scody - even though the artwork/setup was an additional cost. Not sure if they have change this policy but it turned the club away. I understand that they produce overseas now though promote that their patterns are Australian made.
Vie13 is also overseas - this is not a bad thing unless your criteria is local production.
If you find the right people to produce locally and they have the skills, there typically won't be issues with quality but the price is the big point because local labour is more expensive.

I've not tested an Aussie made kit that was more aero than imported specialist kit. Leading edge stuff is cutsom designed using CFD analysis of a rider's position following aero testing. Strategic placement of seams and fabric type matters. Extremely tight fit of course.
Anyone who thinks it doesn't matter might consider I have measured a 20W difference between skinsuit designs.
