I've been wondering am I able to change this bike to 105 5800 11 speed? Are my wheels 11 speed compatible?

Surprised nobody has chipped in about this yet. I reckon you will be ok on a 2015 bike. I don't know for absolute sure but I'd say they would just have the spacer on so they are 10 speed and 11 speed compatible (you prob just need to take the inside spacer off). Anyway I'm sure someone around here like Duck will confirm.

Btw I Reckon they are just a disc version of these 2015s.

Not all of Giant's OE wheels are 11-sp. compatible, even as late as '15 models, so I'm not sure if the Defy Adv. 3's rear wheel is good to go or not. The easiest way to tell is to look behind the cassette; if there is a ~2mm spacer, then the wheel is for 11-sp. & you're good to go. Given the disc-brake spec, and the sense in streamlining production rather than having some wheels for 11-sp. & others not, I suspect it is compatible with 11-sp.

Just means you can upgrade the wheels as well
