I currently have a Shimano Deore FH-M595 rear hub - 135mm old, 8-10 speed, centrelock disc. Sadly the cones are showing brinelling so time for a replacement.
I was thinking about getting an 11 speed hub in case I end up going with a long planned change to drop bars with hydraulic brakes.
Any reason I couldn't replace the hub with a Shimano FH-RS505 Disc rear hub ? Same 135mm old & centrelock disc, would need a spacer to run 8-10 speed cassette.

The hub would include the spacer for running 8-10-sp. cassettes. The additional 1mm spacer for fitting 10-sp. cassettes (except Tiagra & SRAM - complicated story) on 8/9-sp. hubs is still required, and supplied with cassettes that need it.
No reason why you can't swap hubs, but compare the flange spacing and diameter measurements; you may need new spokes to suit.

Just a thought but if its just the cones that are showing brinelling, replace them. If it's the cups, then yes, replace the hub and run the spacer as suggested.

Easy enough to replace cones & ball bearings, but last time I checked the price of a couple of cones was 80% of the price of a new hub.

I seriously doubt that the damage is brinelling. I just don't imagine Bruce doing dirt jumps. Even then it would be an impressive effort. Even headsets only really get false brinelling, although the end result is similar.
I think it is just common garden variety pitting/wear.
Play with a spoke length calculator, the hub dimensions in 3x builds make very little difference to spoke length. You'll probably be able to use the same spokes again if you are determined to do it on the cheap. I have often re-used spokes, occasionally it comes back to bite me. If I was doing a wheel for someone else I'd use new spokes.
