I've found buying directly off their site can be cheaper occasionally, depends on the item.
Campagnolo for show, SunTour for go

I bought my wife a specialized roll, she loves the upright position, the gearing and comfy seat. Have a look at their models.

At what point will you actually pull the trigger and buy a bike? It feels like you want to avoid buyer's remorse, but you can have definitely have too much information sometimes. This thread is now 5 pages long...if you don't feel confident buying second hand after this amount of advice and feedback, I suggest saving up and buying something brand new from a nearby store that gives you a good trustworthy vibe, so if you have any issues or questions you can easily pop back in and see them.
The only part of a new bike that might let you down for light urban use is incorrect gearing ie too difficult to get up hills. Everything else should work well enough. If you love cycling you'll wind up buying a newer better bike within 12-18 months anyway.

The ridiculous part of this is that HH can go onto bike exchange, select road bikes, sort by ascending price and filter for bikes within 50km of Melbourne and there are heaps of really good, entry level road bikes for less than $1k

You'll need a 50 or 52 - price for those sizes are showing $799. I'm 173cm and ride a 52 merida with 90mm stem.
Aus motorists are safe to kill a cyclist at any time & confident that they will be protected from any serious penalties.

Go to Cycling Deal in Dande south.
They have some made up bikes very cheap your size.
Ask for their super specials.
You seem to have some fitness as you mentioned.
Buy one of the cheapies. You will have upgraditis after a few months. - this is regardless on what price you pay for your first rig.
The $599 bikes I mentioned come in a box and you need to assemble yourself. There are made up bikes on the floor - not the same price as boxed however haggle on the price.
There are more bikes upstairs.
