Cycle touring Adelaide to Alice Springs advice sought

Hello bike forum,
I’m a first time forum user, but a regular cycle tourist. I am heading to SA in July, with the aim to ride from Adelaide to Alice Springs over winter. I am hoping to take roads that are not the main highways. However, I would like suggestions of those that are either bitumen or packed gravel (not sand). My bike is a touring bike, not a MTB. Route suggestions in response to this post are very welcome.
