Carbon wheels with rim brakes are shocking in the rain, I’ve been caught with no effective brakes in those conditions - luckily I was on a back road and able to coast uphill to a roundabout then proceed very cautiously.
If you are in a hilly area then I don’t see the point of deep wheels. Depends on what you deem hilly. If it’s 25km uphill at 5-6% then not worth the bother and you may go better training more on the hills.
Where I go for hills, it’s all low profile wheels from everyone - even the very fast riders.
